This perfectly balanced wine begins with inviting aromas of apple, dried apricot, and toasty oak. On the palate, enticing flavors of green apple, pear, lime, and vanilla. The wine pairs nicely with roast chicken or veal entrees.
At Lava Cap, we are dedicated to crafting a Chardonnay that articulates the depth and character of this legendary wine grape. We strive to produce a lush and compelling Chardonnay with an authentic sense of the El Dorado terroir. The fruit was handpicked and carefully sorted during crush. Each lot was separately barrel fermented and aged in French oak barrels for nine months. The old-world winemaking technique of battonage, or stirring of the lees during barrel fermentation, is practiced for every vintage of Lava Cap Chardonnay. These Burgundian aging techniques and great attention during the finishing regime have rendered a wine of intense flavors, rich texture, and lengthy finish.
